Gout and Co is the roaster that I have the longest relationship with. We've worked together quite a few times already, and I always look forward to featuring them. They were the first Chinese roaster that I brought on and were a great introduction to the coffee scene. Tong, the head roaster, worked at Torres de Cafe in Paris along with Joachim from Substance and Loic from Datura. He was pretty influenced by the "French Ultralight" scene that started when Joachim opened Substance and decided to open a roastery with a similar philosophy in Chengdu.
Roast Profile: On the developed side of an ultralight. BK described their roasting to me when I first learned about them as being similar to TPC's omni light roasts, which I definitely agree with. Despite being a touch more developed than Big Sur, their profile tends to be more tea like and delicate compared to Big Sur, which makes it an interesting comparison in my opinion.
