We originally only planned to release John Small and Sunho, but Brewed by Jay reached out to me and suggested that I work with these guys. Aery is run by the 2025 Barista champion (WBC finalist 5th place) Junghwan Lim. Their coffee is lighter than both Sunho and John Small, so possibly the lightest roaster in Korea (or at least the lightest we've found so far!). They have some really unique lots available and we are hyped for them!

Roast Profile: Korean light roast (bana comfort roast?). Not super light, but not roasty unless you push it hard. This will be the lightest roaster from this drop, so maybe moving a bit away from the "Korean Light" description. 

 

Why did we bring this coffee on?

The coffee we are introducing today is a Green Tip Geisha from the ALE plot Grown at 1,820 meters above sea level. the cherries were density sorted, mechanically depulped, and fermented for 24 hours with the mucilage still intact. After being washed with high-pressure water, they were slowly on Alrican beds tor seven days.

Tasting Notes: Super Floral, Jasmine, Bergamot, Shine Muscat, White Pepper

 

What is a weekly release?

It’s a one off feature with a specific roaster. Weekly releases are separate from the subscription. This way you can try coffee from us without subscribing! We also offer some high end and ultra rare lots through this that we wouldn’t be able to feature on our subscriptions.

Do I need to subscribe to purchase the weekly release?

Nope! Weekly releases can be purchased as standalone coffees, no subscription required.

When will my weekly release order ship?

Shipping timelines vary by roaster and international transit. We send weekly email updates so you always know where your coffee is in the process. Make sure to sign up for our newsletter.

What does “presale” mean?

Our weekly releases are sold before the coffee arrives in the U.S. This allows us to source rare international roasters that don’t normally export here. They are roasted to order and we provide an ETA for each release through our newsletter.
