Substance is one of the most hyped roasters we've worked with. Joachim is hugely influential in the ultralight coffee scene and has inspired a wide range of coffee roasters. He doesn't really do wholesale, so we are very happy to be working with him and showcasing his coffee
Roast Profile:
This is a classic ultralight profile. Kind of right in the middle in terms of development in the UL range. Minmax was very inspired by him, so I'd say that that's a solid comparison for roast.
Why Did We Bring This Coffee On?
This is a super unique green that you don't see much of anywhere. Joaquim has said many times that this is his favorite farm in Panama. It's also the highest elevation farm in Panama and a whopping 1956 MASL. Really unique coffee, don't miss this one!
Words from the farm: "One of Finca Sophia’s very first Honey lots! After 18 years we finally gave it a try and loved the gorgeous cup quality, perfectly straddling washed and natural profiles. At once clean and subtly fruity, FS12225 is a nuanced blend of red and yellow fruits, bergamot orange, and wild flower florality. Adjacent to Piedra, Ciprés shares a similar microclimate, and is named after a small stand of cypress trees growing in the area. These trees can provide excellent shade, but also tend to dry out the soil, so we have limited their introduction to Sophia to areas where they do not interfere with coffee production. In this area the coffee trees have adapted and produce excellent quality despite, or perhaps because of, the stress of their thirsty neighbors."
