Aery is run by the 2025 Barista champion (WBC finalist 5th place) Junghwan Lim. Their coffee is lighter than both Sunho and John Small, so possibly the lightest roaster in Korea (or at least the lightest we've found so far!). They have some really unique lots available and we are hyped for them!\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eRoast Profile\u003c\/strong\u003e: Korean light roast (bana comfort roast?). Not super light, but not roasty unless you push it hard. This will be the lightest roaster from this drop, so maybe moving a bit away from the \"Korean Light\" description. \u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eWhy did we bring this coffee on?\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eThe Geisha featured here comes from Lerida Estate at 1,600 meters above sea level. Only the finest cherries were selected after harvest, then depulped and left to undergo an overnight wet fermentation. The coffee was then traditionally washed and slowly dried for 24 days in a greenhouse on African beds. This careful washing and slow drying process was designed to preserve the coffee's inherent quality while bringing out its distinctive character in the cup.
