Aery is run by the 2025 Barista champion (WBC finalist 5th place) Junghwan Lim. Their coffee is lighter than both Sunho and John Small, so possibly the lightest roaster in Korea (or at least the lightest we've found so far!). Not super light, but not roasty unless you push it hard. Only the finest cherries were selected after harvest, then placed on African drying beds under direct sunlight and slowly dried for 14 days. Processed using a classic natural method, this coffee allows the cherry's natural sweetness and aromas to shine through, \u003c\/span\u003e\u003cspan style=\"font-size: 1rem;\"\u003ehighlighting its distinctive fruit character and clarity in the cup.
